Bold, Chili Crunch Noodles Ready in 20 Minutes

If you’re craving bold flavor with minimal effort, these Spicy Chili Crunch Noodles deliver big, garlicky heat with a rich sesame oil base. This easy noodle recipe is perfect for weeknights, van life cooking, or anytime you want a quick, satisfying meal packed with chili crunch flavor.


Ingredients

  • 1/2 cup sesame oil
  • 6 cloves garlic, minced
  • 1 shallot, sliced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp chili crunch
  • 1 tsp paprika
  • Dash of cayenne
  • 7 ounces rice noodles
  • 3 sweet peppers, thinly sliced
  • 1/3 cup low sodium soy sauce
  • 2 scallions, white/light green sliced, greens julienned
  • 2 tbsp chopped cilantro (optional)
  • 2 tbsp chopped peanuts (optional)

Instructions

Heat a skillet to medium and add the oil. Add garlic, shallot, ginger, and red pepper flakes and saute, stirring frequently, until the garlic just starts to turn golden. Transfer to a large bowl and stir in the paprika, cayenne, and chili crunch.

Cook the noodles according to the package instructions. Toss the peppers into the water when there is about 1 minute left on the noodle cooking time. Drain and add to the bowl with the oil mixture. Reserve a little of the cooking water.

Add soy sauce, herbs, peanuts, and scallions and stir. If needed, thin it out with a little pasta water. Taste and add more soy sauce if needed.
