Easy Breakfast Skillet Ingredients (Serves 2)
- 3 tbsp olive oil, divided
- 6–8 oz breakfast sausage
- 1 potato, diced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 tsp cumin
- 1/2 tsp paprika
- 4 eggs
- 1 cup shredded cheddar cheese
- 1 tbsp pickled jalapeños (optional)
- 1 tbsp sliced scallions (optional)
- 2 tbsp salsa verde or hot sauce
How to Make a Breakfast Skillet
Heat 1 tablespoon of olive oil in a cast iron skillet over medium heat. Add the breakfast sausage and cook until browned and fully cooked through. Remove from the skillet and set aside.
Add the remaining 2 tablespoons of olive oil to the skillet, then toss in the diced potatoes. Season with salt and pepper. Cook for 15–20 minutes, stirring occasionally, until the potatoes are golden brown, crispy on the outside, and fork tender.
Push the potatoes to one side of the skillet. Add the onions and garlic to the empty side and cook for 2–3 minutes until softened and fragrant.
Return the sausage to the skillet. Sprinkle in the cumin and paprika, then stir everything together. Create four small wells in the mixture and crack the eggs into each one. Top with shredded cheddar cheese, cover, and cook for 3–5 minutes until the egg whites are set and the yolks are cooked to your liking.
Finish your easy breakfast hash with pickled jalapeños, sliced scallions, and salsa verde for a little extra kick and flavor.
