How to Make Creamy Sausage Penne Pasta
Cook the pasta
Bring a pot of salted water to a boil and cook the penne until al dente according to package instructions.
Brown the sausage
Heat a large skillet over medium heat. Add the sausage and let it brown on one side before breaking it up with a spatula. Cook until no longer pink.
Sauté aromatics
Add olive oil, then stir in the diced onion. Cook until softened, then add garlic and cook for about 30 seconds.
Build the sauce base
Sprinkle in the flour and cook, stirring, for 1–2 minutes. Add the white wine and let it reduce by half, scraping up any browned bits from the pan.
Create the creamy sauce
Add chicken stock and thyme, bring to a low boil, then reduce heat to medium-low. Stir in the heavy cream and parmesan. Cook until the sauce thickens and coats the back of a spoon.
Finish the dish
Reduce heat to low, taste for salt, and stir in the spinach until wilted.
Serve
Toss with cooked penne or serve over top. Garnish with red pepper flakes if desired.
