π Wicked Good Twice Baked Potatoes β No Oven Needed! ππ₯
Hubs loves twice baked potatoes, but in the van, itβs a whole different game β no oven, no splatter, and definitely no bacon (for the sake of peace). π οΈπ«π₯ But donβt worry β vegetarian style can still be magnificent! π
Hereβs my no-fuss, no-oven twist thatβll blow your mind:
Ingredients:
- 2 medium to large potatoes π₯π₯
- 1/3 cup shredded cheddar π§π§
- 1/4 cup sour cream π
- 1.5 tbsp butter π§
- 2 tbsp chopped chives πΏπΏ
- Salt & pepper to taste π§π§
How I do it on the road:
- Preheat your grill to about 400Β°F. π₯ Wrap the potatoes in foil and toss ’em on the grill with the lid closed. Cook for 50-60 mins until tender.
- Turn the potatoes sideways, cut off the top third, and scoop the innards into a bowl, leaving a thick potato shell (this is your edible bowl β yum!). Discard the potato skin from the top. π©βπ³β¨
- Mix the scooped-out potato with shredded cheddar, sour cream, butter, chives, and a touch of salt & pepper. Stuff it back into the potato shells like a pro! ππ§
- For that perfect crispy finish, make little foil boats to hold the potatoes and pop ’em back on the grill for about 5 mins. At home, Iβd pop βem under the broiler β but on the road, this is the way to go! π€π
