Delightfully Good Soup

It’s officially soup season, and there’s nothing better than making a hearty soup while on the road! This Turkey, White Bean, and Kale Soup is easy to prepare, packed with flavor, and provides excellent leftovers for lunch. It’s a healthy option that combines lean protein with nutrient-rich leafy greens.

Ingredients:

  • 3 tbsp olive oil
  • 1 yellow onion, chopped (divided)
  • 1 carrot, diced
  • 1.5 tbsp tomato paste
  • 1 tsp fresh thyme leaves
  • 1 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1 lb ground turkey
  • 4 cloves of garlic, peeled and minced
  • 1 tbsp fresh ginger, peeled and grated
  • 1 quart low-sodium chicken stock
  • 1 can cannellini beans, drained and rinsed
  • Large handful of rinsed and torn kale leaves
  • Salt and pepper (to taste)
  • 3/4 cup chopped parsley (for garnish)

Instructions:

  1. Start by heating the olive oil in a large pot over medium-high heat. Add the chopped onion and diced carrot, stirring frequently until they soften and the onion starts to brown (about 8 minutes).
  2. Stir in the tomato paste, cumin, thyme, and red pepper flakes, cooking for about 1 minute until the mixture deepens in color.
  3. Add the ground turkey, minced garlic, grated ginger, and a pinch of salt. Cook while breaking up the turkey until it’s fully browned and there’s no pink remaining (about 5 minutes).
  4. Pour in the chicken stock and add the drained white beans. Simmer the mixture for about 20 minutes. Use a potato masher or spoon to mash some of the beans for a thicker broth. Taste and season with additional salt if needed.
  5. Add the torn kale leaves to the pot. Simmer for an additional 10 minutes until the kale is tender.
  6. Serve hot, garnished with a generous helping of chopped parsley for added freshness.
