Spicy Pork & Pineapple Tacos

Sometimes, you just need a little extra spice to spice up your day, right? These Spicy Pork and Pineapple Tacos are just what the flavor doctor ordered! The smoky heat from chipotle peppers perfectly balances the sweetness of grilled pineapple, creating a dish that’s impossible to resist. Bonus? It’s quick, easy, and guaranteed to wow a crowd — or make a sweet, spicy date night at home even more special.

Got a food processor or blender? Even better — dinner just got way easier!


Ingredients:

  • 4 half-moon slices of pineapple (about 1″ thick) 🍍
  • 1 tbsp vinegar 🍎
  • 2/3 of a 4 oz can chipotle peppers in adobo sauce (chili and sauce, minced) 🌶️
  • 2 cloves garlic, minced 🧄
  • ½ tsp oregano 🌿
  • 1 tsp cumin 🌟
  • ½ tsp salt (plus more for pork browning) 🧂
  • 1 tsp chili powder 🌶️
  • 1 pound ground pork 🐖
  • Flour or corn tortillas 🌮

For garnish: Lime wedges and fresh cilantro — because everything’s better with a squeeze and a sprig!


Let’s get spicy! 🌶️🔥

  1. Grill the pineapple: Preheat your grill to medium-high. Grill the pineapple slices about 4 minutes per side until grill marks appear and the pineapple is fragrant with smoky goodness. Then, chop half of the pineapple very finely — if you have a food processor, use that! The other half gets cut into small bite-sized pieces and set aside.
  2. Make the spicy pineapple mix: In a bowl, stir together the finely chopped pineapple with the minced chipotle and sauce, vinegar garlic, oregano, cumin, chili powder, and a 1/2 tsp of salt. It’s your flavor bomb — set it aside.
  3. Cook the pork: In a skillet over medium-high heat, brown the ground pork. Resist stirring immediately — let it brown well on one side for a few minutes, then break it apart with a spatula or fork, cooking until fully browned and cooked through. Drain any excess fat (this is not an easy thing to do in the van, but more on that later!).
  4. Combine and cook: Return the pork to the pan and stir in your spicy pineapple mixture. Let it cook for about 5 minutes, stirring frequently, until everything is heated through and flavors meld. Toss in the other half of the pineapple and mix. Take it off the heat!
  5. Assemble & garnish: Fill warm tortillas with the spicy pork and pineapple mixture. Garnish with fresh cilantro and squeeze lime juice over the top.
