Salsa Verde Poached Eggs with Black Beans 🍳🌶️
To be honest, eggs aren’t my favorite—🌱🙅♀️—but I will eat just about anything with Salsa Verde on it. At home, I make my own salsa, but when we’re bouncing from spot to spot every day, ain’t nobody got time for that! ⏰ So, I found a brand I like that works just fine.
If you’ve ever had Shakshuka, you’ll recognize the vibe here—minus the oven, since I don’t have one in the van. 😉🔥 I hope you try this and love it as much as I do!
What you’ll need (for two servings):
About 1 cup salsa verde 🥑🌽
1 can of black beans, drained and rinsed 🫘
Four eggs 🍳
1.5 cups shredded cheese (I used Colby Jack and cheddar—because that’s what I had, but pepper jack would also be a good addition) 🧀
2 tbsp sour cream 😋
1 avocado, sliced 🥑
Pickled red onion (see instructions below) 🧅
3 tbsp chopped cilantro 🌿
Let’s cook!
Heat a medium skillet over medium-high heat, then add the salsa verde and black beans. Bring it to a strong simmer and reduce the heat to medium low. Add all but ½ cup of the cheese and gently fold it in until melty and irresistible. 🧀🔥
Crack the four eggs into the mixture, cover the pan, and cook. If you’ve got an oven, you can put the whole thing in there at a preheated 325°F—but honestly, the covered pan on the stovetop works just as well. Cook for about 10-12 minutes, until the whites are set and no longer runny. Top with the remaining cheese for that extra cheesy goodness. ✨
To plate:
Spoon the salsa, bean, and cheese goodness into a bowl or onto a plate. Top with those perfect poached eggs 😍, then garnish with a dollop of sour cream, slices of creamy avocado, fresh cilantro, and of course, that colorful pickled red onion.
Pickled Red Onion:
Thinly slice ½ red onion and toss it in a bowl. Cover with 1 tsp sugar and a splash of apple cider vinegar. Give it a stir, then pop it in the fridge to get happy. It’s a simple addition that adds that perfect tang and crunch! 🧅🍎
