Smoky, Rich & Easy Homemade Tomato Soup Recipe
If you love a classic tomato soup, this Roasted Tomato Soup takes things to the next level. Roasting the tomatoes and carrots adds a deep, smoky flavor that makes this soup taste restaurant-quality with minimal effort. This is a meal that can be made at home or on the go!
I got the inspiration for this recipe while out to lunch with colleagues. Someone ordered tomato soup that smelled incredibly earthy and fresh — I figured roasted tomatoes had to be the secret. This is my take on recreating that flavor at home, and it’s surprisingly simple to make.
Perfect for cozy dinners, meal prep, or pairing with a crispy grilled cheese sandwich.
Ingredients
- 3 tbsp olive oil, divided
- 2 pounds roma or plum tomatoes
- 2 carrots, peeled
- 2 yellow onions, diced
- 5 cloves garlic, peeled and crushed
- 3–4 tbsp roughly chopped basil
- 28 oz can crushed tomatoes
- 4 sprigs fresh thyme
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper
Instructions
Preheat grill to medium heat and coat tomatoes and carrots in about 1 tbsp oil and salt. Once the grill is to temperature, grill vegetables for 20–25 minutes, turning every 6 or 7 minutes, until blistered and fairly charred.
Once cooled, roughly chop the tomatoes and set aside.
In a soup pot, heat remaining oil to medium heat and add onions and garlic. Cook, stirring regularly, for about 7 minutes, until the onion just starts to brown. Add the canned tomatoes, roasted tomatoes, and carrots. Add the herbs, and thin with water if necessary.
Cook for 20–30 minutes, adjusting with water for thickness. Season with salt and pepper to taste.
