This recipe features tender pork tenderloin medallions, marinated in a zesty blend of fresh ginger, thyme, wine, and honey, then cooked to perfection and served with a rich, satisfying red wine sauce. It’s a fantastic dish for special occasions or a cozy weeknight dinner, promising robust flavors that will impress your family and friends.

Ingredients:

  • 1 pork tenderloin, sliced into about 1.5-inch rounds
  • Salt and pepper (to taste)
  • 1 tbsp grated fresh ginger
  • 4 sprigs of fresh thyme (or 1 tsp dried thyme)
  • 2 tsp honey
  • 1/2 tsp dried rosemary
  • 1/2 cup dry red wine
  • 1 tsp white wine vinegar
  • 1 shallot, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp butter

Instructions for Pork Medallions with Red Wine Sauce:

  1. Pound out the pork slices slightly and lightly season them with salt and pepper.
  2. In a small bowl, combine the grated ginger, thyme, honey, rosemary, red wine, and white wine vinegar. Place the pork in a flat dish and pour the marinade over the slices. Allow them to marinate for 10-15 minutes.
  3. Remove the pork from the marinade and pat dry, reserving the marinade for the sauce.
  4. Heat olive oil in a skillet over medium-high heat (a cast iron skillet works great for this). Ensure your pan is large enough to fit the pork slices in a single layer. Cook the medallions for about 5 minutes on each side. If you prefer them cooked longer, reduce the heat and cook for a few more minutes. Remove the pork from the pan and cover with foil to keep warm.
  5. Add the thinly sliced shallots to the skillet and cook until just soft. Pour in the reserved marinade and cook, scraping the bottom of the pan as you stir. Continue to cook and stir until the sauce reduces slightly, then stir in the butter. Season to taste with additional salt and pepper as needed.
  6. Remove the thyme sprigs (which can be used as a garnish) and serve the pork medallions over mashed potatoes, rice, or my Pea and Mushroom Risotto for a complete meal.
