๐ Breakfast Mashed Potato Quesadilla ๐ฅ๐ง๐ฎ
Searching for the perfect weekend brunch in the van? ๐ณ๐ I love a hearty breakfast after a morning of exploring โ it fuels us up without the need to cook again until dinner! ๐ฝ๏ธ
And let me tell you โ this one was a TOTAL hit. The hubs declared it the best thing Iโve made in the van so far โ I couldnโt agree more! It turned out so delicious, I had to share. โจ
Hereโs what youโll need (for two medium-sized quesadillas / 2 servings):
- 1 large potato ๐ฅ, peeled and cubed
- 2 tbsp chopped chives ๐ฟ
- 1.5 tbsp butter (for the mashed potatoes & cooking the quesadillas & eggs) ๐ง
- 1/4 cup sour cream (no judgment, folks) ๐
- Salt & pepper to taste ๐ง
- 4 medium tortillas ๐ฎ๐ฎ
- 2 eggs ๐ณ
- Small handful of cilantro, roughly chopped ๐ฟ๐ฟ
- 1/3 cup queso fresco, crumbled ๐ง
- 2-3 tbsp salsa verde ๐ถ๏ธ๐
Letโs put it all together!
- Boil the potatoes until tender, then drain and pop them back in the pot. Add the sour cream, butter, chives, salt, and pepper โ Smash the potatoes, I like mine a little lumpy. ๐ฅ๐ฅ
- Heat up a skillet or sautรฉ pan over medium heat and melt a little butter. Spread half the mashed potatoes onto two tortillas, top with the other two tortillas, and cook each quesadilla until golden brown on both sides. Keep warm under foil! ๐ฅ๐ฎ
- For the eggs โ I basted mine, but you can do what you like. Too baste them, when whites are just about set, drizzle a tiny splash of water around the eggs, cover, and cook for about 30 seconds until set. Season with salt and pepper. ๐ณโจ
- Plate it up! Put a warm, crispy quesadilla on your plate, top with an egg, and sprinkle with crumbled queso fresco, chopped cilantro, and a drizzle of salsa verde. Cue the flavor explosion! ๐๐
