Baharat Spiced Pork Tenderloin with Chopped Salad — Easy & Delicious in the Van 🌍🔥
Hear me out — I don’t cook Middle Eastern food all the time. Not because I don’t love it, but cooking in a van means we keep our spice inventory small. 🚐✨
But when my brother gifted us some Baharat—a flavorful Middle Eastern spice blend—I was inspired to create something fantastic with limited ingredients. Pork tenderloin turned out to be a perfect choice, paired with a middle eastern style fresh chopped salad for a light, healthy side. 🥩🥗
Here’s how I made it:
Ingredients for the Pork:
- 1 Pork Tenderloin 🥩
- 1 tbsp orange zest 🍊
- Juice of 1 orange 🍊
- 1 tbsp Baharat spice blend (You can make the blend yourself if you prefer, if you Google it—you’ll find plenty of recipes!) 🌿✨
- 1 tsp paprika 🌶️
- 2–3 cloves garlic, minced 🧄
- 1 tsp salt 🧂
- ¼ cup olive oil 🫒
Cooking Method:
- Whisk together the zest, juice, spices, garlic, salt and put in a sealed back with the pork to marinade for 3 or more hours in the fridge. Remove from fridge at least 30 minutes before cooking.
- Preheat your grill to about 400°F. 🔥
- Grill the pork for about 8-9 minutes, then turn and cook an additional 5-7 minutes. Check that the internal temp reaches around 145°F. ✅
- Rest the pork for 5–10 minutes before slicing. This keeps it juicy! 💤
For the Salad:
This salad is as flexible as a US gymnast, so use what you have. Tonight, I used what I had on hand:
- Yellow bell pepper 🌶️
- Half a cucumber 🥒
- A tomato 🍅
- Half a jalapeño 🌶️🔥
- A quarter of a red onion 🧅
- Fresh mint & parsley 🌿
- 2 cloves garlic 🧄
- Juice of half a lemon 🍋
- 1 tbsp olive oil 🫒
Chop all the veggies and herbs, then toss with lemon juice, olive oil, and a pinch of salt. Easy, fresh, and vibrant! 🌟
