Easy Grilled Mojo Chicken Recipe
If you ever find yourself craving bold Cuban flavors, this Grilled Mojo Chicken is the perfect answer. Juicy chicken thighs are marinated in a classic Cuban mojo marinade made with garlic, lime, cumin, and oregano, then grilled until perfectly charred and flavorful.
I first made this while cooking in our camper van after some neighbors at a campground gifted us cooking bananas. That sealed the deal — it had to be Cuban night. This recipe is simple, packed with citrus and garlic flavor, and perfect whether you’re cooking at home or on the road.
Ingredients (4 servings)
2–2.5 lbs boneless, skinless chicken thighs
Marinade
1 shallot, roughly chopped
5 cloves of garlic, peeled and smashed
2 tsp cumin
1 tsp oregano
Zest of one lime
3 tbsp lime juice
1/4 cup olive oil
1 tsp salt
1/2 tsp freshly ground pepper
Instructions
Mix all of the ingredients for the marinade in a bowl. Add the chicken to the marinade, and stick it in the fridge for at least 1.5 hours, or up to a day.
Preheat your grill to 400 degrees. Remove the chicken from the marinade and cook for about 5–7 minutes per side.
Allow the chicken to rest.
I served this with Cuban Black Beans and Rice and Fried Plantains.
