Ingredients
Chicken:
- 2 pounds bone-in, skin-on chicken thighs
- Olive oil
- Salt and pepper
Mushroom Gravy:
- 2 tbsp butter, divided
- 1/2 pound mushrooms, sliced
- 4-5 cloves of garlic, peeled and crushed
- 1/2 cup white wine (for deglazing)
- 5-6 sprigs of fresh thyme (1 tsp of dried thyme works in a pinch)
- 1/2 tsp dried rosemary
- 2/3 cup low-sodium chicken stock
- Salt and pepper (to taste)
Mashed Potatoes:
- 1 pound russet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp butter (soft or melted)
- 1/4 cup sour cream
- Salt and pepper (to taste)
Instructions for Braised Chicken Thighs with Mushrooms:
- Preheat your oven or grill to 425°F (220°C). Coat the bottom of a room temperature cast iron skillet with olive oil.
- Generously season the chicken thighs all over with about 1 teaspoon of salt and freshly ground pepper. Place them skin side down in the skillet, then transfer the skillet to the preheated oven or grill. Close the door and let the magic happen!
- Cook the chicken undisturbed for about 15 minutes, or until the skin is perfectly browned.
- Remove the skillet from the oven/grill and transfer the chicken to a plate. Return the pan to the stove over medium heat and add 1 tablespoon of butter. Once the butter has melted and the foam subsides, add the sliced mushrooms and crushed garlic.

- Pour in the white wine and simmer for a few minutes, allowing the wine to reduce. Stir in the dried rosemary and fresh thyme, followed by the low-sodium chicken stock. Let it simmer for about 5 minutes.
- Return the chicken to the pan, skin side up, resting on the mushroom mixture. Cover and braise over medium-low heat for 25-30 minutes, allowing the flavors to meld beautifully.
For the Creamy Mashed Potatoes:
- While the chicken is braising, bring a pot of salted water to a boil and add the cubed russet potatoes. Cook until tender, then drain.
- Add butter and sour cream to the drained potatoes and mash until smooth. Season with salt and pepper to taste.
To Serve:
- Carefully remove the chicken from the skillet and stir in 1 tablespoon of butter into the mushroom sauce. Adjust seasoning with salt and pepper as desired.
