Perfect for Fall Nights
As the leaves turn and temperatures drop, there’s nothing better than a warm, comforting stew to enjoy whether you’re at home or on the road. This hearty but simple Sausage and White Bean Stew is my go-to fall dish — crafted to cook outside on the grill, making it perfect for camping, tailgating, or cozy evenings at home.
I needed a quick dinner for two, with some leftovers to enjoy later, and this recipe hit the spot. It’s loaded with flavorful Italian sausage, tender vegetables, and creamy white beans — all simmered to perfection in a cast iron skillet over the grill.
Ingredients:
- 2 tbsp olive oil
- 1 lb mild ground Italian sausage
- 1.5 tsp tomato paste
- 1 tsp cumin
- 2 small to medium carrots, peeled and sliced
- 1 stalk celery, sliced
- 1/2 yellow onion, diced
- 3 garlic cloves, minced
- 2 tbsp chopped fresh rosemary
- 1 can white beans, drained and rinsed
- 1 tsp dried thyme
- 2.5 cups chicken stock (low sodium)
Cooking Instructions:
- Preheat your grill to 400°F with a cast iron skillet placed on it.
- Once hot, add olive oil and cook the sausage, breaking it up and browning it until no pink remains. Remove the sausage and set aside.
- Stir in the tomato paste and cumin, cooking until the paste deepens in color, then add the onion, garlic, carrots, and celery. Keep the grill closed as much as possible and cook for 6–8 minutes, stirring once in a while until vegetables soften.
- Pour in the chicken stock and add the herbs. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Stir in the white beans, smashing some to thicken the stew, and simmer for another 5 minutes.
- Return the sausage to the skillet and simmer for an additional 5 minutes, blending flavors. Taste and season with salt if needed.
- Serve hot, garnished with fresh rosemary sprigs for a fragrant touch.
