- 3 tbsp butter
- ⅔ cup black beans, drained and rinsed
- 3 eggs

- 4 fajita-sized flour tortillas
- ¾ cup shredded cheddar cheese
- 2 tbsp sour cream
- 4 tbsp chopped cilantro, divided
- 4 tbsp sliced scallions, divided
- 1 tbsp pickled jalapeño
How to Prepare:
1. Whisk and mix:
In a bowl, whisk together the eggs, 1 tablespoon of salsa verde or hot sauce, and a pinch of salt. Stir in the black beans for added protein and flavor.
2. Cook the eggs:
Melt 1 tablespoon of butter in a skillet over medium heat. Pour in the egg mixture and cook, stirring frequently, until just set. The eggs will continue to cook in the next step, so don’t overdo it. Transfer the cooked eggs to a bowl, stir in half the scallions and half the cilantro, and wipe out the skillet.
3. Assemble the quesadillas:
If your skillet is large enough, add 2 tablespoons of butter and heat over medium. Otherwise, prepare one quesadilla at a time with 1 tablespoon of butter.
